Most americans will probably be mad at me for calling this a chili, but it's one of my favourite dishes if I'm honest.. so here's the stuff you need.
2 pounds minced beef, browned and drained
2 cans kidney beans, canned, drained
2 cans whole tomatoes, drained and chopped
1 ounce of dark chocolate (chopped)
8 tablespoons dried and crushed chili (I prefer chipotles, habaneros and piri piris)
2 cloves of garlic, minced
2 teaspoons coriander
2 teaspoons cumin powder
2 teaspoons salt
3 teaspoons black pepper
2 teaspoons smoked paprika
1 teaspoon brown sugar
1 tablespoon worchestershire sauce
1 tablespoon olive oil
1 carrot, coarsley chopped
2 large onions, coarsely chopped
Fresh chilies (to taste, use whatever you like)
7 ounces black olives (pitted and drained)
1/2 cup beef stock
(optional) 1/2 teaspoon Dave's ultimate insanity sauce
Edit: forgot 1/4 teaspoon of cinnamon (thanks Skyfire77 for reminding me).
Throw it all in a crock pot, let simmer for 8-10 hours, serve with mashed potatoes and sour cream.

that dark chocolate is a nice touch. I usually use shitty beer as sugar in it.

Dark chocolate is AMAZING in chilies.
And yes, I do get both dave's and blair's over here as well as a ton of other hot sauces, I have to many of them if I'm honest :P

Beans, olives, tomatoes etc.. I have heard so many things "wrong" about the way I make chili you won't believe it :P

Chili and choc is a good match - see mole sauce - but kimchee'd chocolate bar I'm less sold on. (Yes, that is a thing. Yes, I have had it.)

i used to work with a guy from Texas (we're in Boston) , one friday we went out for lunch to a TexMex place and he ordered chili. When it arrived he promptly lost his shit at the sight of the beans in his chili. Fckin beans!!!!!! OMG thew world is burning. i got a good laugh out of it. his face turned red, I thought he was gunna run into the kitchen and drown the cook in his own chili. fortunately he contained his rage to us at the table.

It's almost as suspect as the sweet ginseng candy - but that is arguably better than it sounds.
(we end up with a lot of crazy Korean things at my house, it's complicated)

Olives, IMHO, should be added to the preparation of chili after cooking as an extra ingredient like cheese rather than being cooked in. That being said, it's all going the same place. Tomatoes can go either way. I prefer non-bean, but won't say no to a good mix as long as the beans are right.

The only reason I add the olives prior to cooking is because I use cheap olives in this dish :)

According to * this *, Korean cuisine is quite available to you - closer than a location is to me, anyway. They basically have kits for kalbi and bulgogi that are really easy to get set with and prepare - pre-sliced meat + sauce that you can just throw together and go with, not to mention all the aforementioned candies and so on. There's also the kimchee aisle and the aisle and a half of ramen, not to mention Fanta from the former eastern bloc (don't ask me, I don't know), and a wide range of hispanic foods (including, say Abuelita hot chocolate with spices). Basically, H-Mart rocks.

My sense is, if I come up that way, I can totally hit an H-mart on the way and arrive with shit still cold. Not that that's a substitute for taking a trip to little Korea yourself, but it's a thing that could happen.

am I the only one with an irrational fear about leaving the crock pot unattended at home and it burning down my apartment?
my other irrational fears are getting paralyzed by a chiropractor and also getting into a fatal accident on my way to collect mega million lottery winnings should I win.

looks like I have a plan for Saturday. The last time I made chili it was far too much, by the 4th day of eating it for lunch and dinner I was so sick of it . I'll need to make a small batch

I usually make enough for ten people and put half of it in ziplock bags and freeze it, invite friends over for the remaining half.

As a chili expert I can say with these two ingredients and a slow cook:

Yup, that's chili. All the other stuff is just making it your own which any good chili will do.
My home stuff is usually whatever ground beef is on sale (2-5 lbs) couple cans of tomatoes, couple cans of pickled jalapenos, can of pinto beans, bunch of mushrooms in gravy, a diced red onion, and 4 or so tablespoons of chopped garlic from a jar. If I'm making it for a contest I'll add some other spices for depth, but if we're just eating it it goes as is.

That looks rather nice, it also reminded me that I forgot to add cinnamon on my list of spices up there, I always add 1/4 of a teaspoon cinnamon.

This is more my style. I don't keep about 75% of the ingredients on hand for the above recipe. I generally keep things pretty simple.
